Ingredients
Olive Oil for frying
1 Onion, chopped
1 tsp ground cumin
1 tsp tumeric
1 medium sweet potato, peeled and diced
2 potatoes, peeled and diced
1/2 packet pumpkin chunks, finely diced
1 large carrot, peeled and finely diced
1 can chickpeas
5 cups chicken stock
Toast Fingers
Method
Heat oil in a pan and fry onion until soft
Add spices and fry for a further 30 seconds
Add remaining ingredients and cook for 15 to 20 minutes or until vegetables are tender
Server hot with toast fingers
