Chicken and rice bake, topped with salt and vinegar potato chips

  • 4 Chicken Breasts, Diced
  • 1 packet cream of chicken soup
  • 250 ml cooked rice
  • 2 hard boiled eggs
  • 300 ml chicken stock
  • 100 g crushed potato chips
  • 60 ml mayonnaise


  1. Pre-heat oven to 180' c
  2. Fry chicken breasts in a little oil until done
  3. Mix soup powder with chicken stock
  4. Mix all other ingredients, but keep a quarter of the potato chips aside
  5. Spoon the mixture into a shallow oven dish
  6. Sprinkle crushed potato chips on top
  7. Bake for 30 to 40 minutes

Note: Do not add salt because the chips already have enough

Note: Potato chips also known as crisps in some countries...
