Sausage and Vegetable Casserole


This vegetable casserole is good for cold winter evenings..

  • 2 Tbsp olive oil
  • 4 pork sausages
  • 1 onion, chopped
  • 1 clove garlic, coarsely chopped
  • 1 small butternut, peeled and diced
  • 1 small sweet potato, peeled and diced
  • 1 red pepper, diced
  • 1 1/2 cups vegetable stock
  • Any other vegetables you want
  • Salt and Pepper (Optional)


  1. Heat half the oil in a pot and fry sausages until golden brown, remove and set aside.
  2. Heat remaining oil and fry onion and garlic until soft.
  3. Add remaining vegetables and fry for 5 minutes.
  4. Add stock, cover and cook over a low heat for 25 to 35 minutes.
  5. Add sausages, season and cook for another 10 minutes.
  6. Serve hot.
