Potato Skins

  • 6 small to medium sized baking potatoes
  • Olive oil
  • Canola oil or grapeseed oil
  • Salt
  • Freshly ground pepper
  • 6 strips of bacon
  • 1 cup grated cheddar cheese
  • 1/2 cup sour cream
  • 2 spring onions, thinly sliced


  • Pre-heat oven to 180C
  • Scrub the potatoes clean
  • Rub with olive oil and bake for 45 minutes or until cooked through and give a little when pressed
  • Fry bacon until crisp, drain on paper town until cool, crumble
  • Remove potatoes from oven and cool until they can be handled.
  • Spoon out centers, leave about half a centimeter of potato on each skin
  • Increase oven to 220C and brush grapeseed on skins
  • Bake for 5 minutes per side until crispy then remove from oven and let cool for 5 minutes
  • Arrange the potato skins skin-side down on the roasting pan or rack
  • Sprinkle the insides with freshly ground black pepper, cheddar cheese, and crumbled bacon
  • Return to the oven, bake for another 5 minutes or until the cheese is bubbly
  • Remove from oven
  • Place skins on a serving plate and add a dollop of sour cream to each skin then sprinkle with green onions

Serve immediately
