Parmesan crumbed chicken breasts

  • 4 free range chicken breasts
  • 1/4 cup parmesan
  • 2 cups fresh breadcrumbs
  • Salt and pepper
  • 3 tablespoons flour
  • 2 large eggs, beaten
  • Vegetable oil for frying


  1. Butterfly each chicken breast by halving each breast. Beat out each breast using a meat mallet or rolling pin.
  2. Mix breadcrumbs and Parmesan together in a shallow bowl.
  3. Season fillets, dust in flout, dip in egg and then coat in breadcrumbs.
  4. Refrigerate for 30 minutes to set.
  5. Heat a glug of oil in a pan and fry until golden brown and cooked through.
