  • 180g of flour
  • 120g salted butter
  • Sugar 60g
  • 1 egg yolk
  • 1 tsp baking powder
  • 1 pinch of salt
  • For the caramel :
  • 100g of sugar
  • 100g salted butter
  • 2 pinches of sea salt
  • Sweetened condensed milk 400g
  • 2 tbsp maple syrup
  • For the chocolate icing :
  • Milk Chocolate 250g
  • 50g salted butter


Preheat oven to 180 ° C or gas mark 6
Put in a bowl the sugar, flour, baking powder, salt and butter. Knead the fingertips or with a mixer. Add an egg yolk and continue to knead. Do not overwork the dough, it should not be elastic.
Spread dough with your hand on a sheet of baking paper and covered in a square mold.
Bake 20-25 minutes, until the pastry is golden.
Meanwhile, put the sugar in a saucepan and heat without touching it.
 Once the caramel is dark, add butter, sweetened condensed milk and maple syrup, then whisk.
Finally, add a pinch of salt. Let cool.
Once the cake is cooled, leave it in the pan and pour the caramel on top and spread well.
Refrigerate for 30 minutes.
n a bowl, place chocolate and butter and melt in microwave or double boiler.
Pour over the caramel is now fixed and spread
Let cool for 2 hours in the refrigerator and serve in small portions.
