Lemon and Honey Chicken


Cooked this way, the chicken develops a delicious sweet-sour, sticky coating

  • 3 Lemons, 50g butter, 3 tbsp clear honey,1 garlic clove, finely chopped, 4 rosemary sprigs, leaves strepped, 8 chicken pieces, such as thighs and drumsticks, 750g potatoes, cut into smalish chunks, serve with green salad


1. Preheat the oven to180c. Squeeze the juice from 2 lemons and put in a small pan with the butter, honey, garlic and rosemary and season. Heat gently until butter melts.

2. Arrange the chicken in one layer in a shallow roasting tin. Put the potatoes around the chicken. Drizzle the lemon butter over the chicken and potatoes, turning the potatoes until evenly coated.  Cut hte remainging lemon into eight wedges and nestle them amond the potatoes.

3. Roast the chicken for 50 minutes to 1 hour, stirring a couple of times until the chicken is cooked and the potatoes are crisp and golden. Serve with a green salad.
