Ingredients


  • 2 Cups flour
  • 2 Eggs
  • 5 Tbs Sugar
  • 4 tsp Baking Powder
  • 1 Cup Milk
  • 1 1/2 Tbs melted butter or margarine
  • 1/2 tsp Salt
  • 1 tub low fat cream cheese
  • 1 Lemon
  • 100 g pecan nuts, coarsly chopped
  • 3 Tbs Honey plus extra for serving

Method


Crumpets:

  1. Beat eggs, adding sugar. Add ½ cup milk & butter.
  2. Sift flour, bp & salt into egg mixture.
  3. Gradually stir in remaining milk to form smooth batter.
  4. Do not stir once ingredients have been well blended.
  5. Drop spoonfuls on a hot greased pan.
  6. Cook one side until air bubbles begin to show. Turn & cook other side until golden.

Filling and Topping:

  1. Mix the honey, lemon juice, lemon peel, cheese and some of the nuts together
  2. Sandwidch mixture between several crumpets and top with more honey and sprinke with some of the crushed nuts
