  • <b>Cake Mix:</b>
  • 4 eggs
  • 1 1/2 cups sugar
  • 2 tbsp butter
  • 1 cup milk
  • 2 cups cake flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 2 tbsp guavadilla pulp
  • <b>Topping:</b>
  • 250 ml icing sugar
  • 2 tbsp butter
  • 2 tbsp guavadilla pulp


  1. Preheat the oven to 180'C
  2. Grease two sandwidch cake tins, 220 mm in diameter.
  3. Beat the eggs thouraghly, gradually adding the sugar, beat until light.
  4. Melt the butter in the milk to make a thin warm liquid.
  5. Add the guavadilla pulp.
  6. Sift toghether the cake flour, baking powder and salt. Then sift this mixture into the egg mixture, fold it in carefully.
  7. Add the vanilla essence.
  8. Add the hot liquid to this mixture and blend quickly.
  9. Pour the batter into the prepared tins.
  10. Knock the tins a few times on a table to remove air bubbles.
  11. Bake for 25 to 30 minutes.
  12. Test if done: Insert a skewer into the cakes. If it comes out clean and the cakes have shrunk away from the sides of the tins they are done.
  13. Cool the cakes for a few minutes in the tins, then turn them onto a wire rack.
  14. When completely cooled, sandwich together with any filling of your choice.
