  • 4-5 large unpeeled washed potatoes
  • Salt and milled pepper
  • 1 extra large egg
  • 1/2 cup fresh cream
  • 1/2 cup water
  • 1 tsp chicken stock powder
  • 1/2 cup fresh white breadcrumbs
  • 1/2 cup grated cheese


  1. Preheat oven to 180C
  2. Butter a medium sized ovenproof dish.
  3. Parboil potatoes in their skins for 12 minutes.
  4. Slice potatoes into 3mm thick rounds and later into the dish, season lightly.
  5. Beat egg, cream, water and stock powder until well blended.
  6. Pour mixture gently into the dish from the side.
  7. Mix breadcrumbs and cheese and sprinkle over the potatoes.
  8. Bake for 35 to 40 minutes until golden and cooked through.
