Feta and Lemon Chicken Schnitzel

  • 4 chicken breasts
  • 1 cup fresh breadcrumbs
  • 1 disk feta, crumbled
  • 2 tbsp chopped thyme
  • 1 lemon peel, grated
  • 1 pinch white pepper
  • 1 extra large egg, beaten
  • Olive oil, for frying


  1. Place chicken between 2 sheets of clingfilm
  2. Gently flatten with a rolling pin
  3. Cimbine breadcrumbs, feta, thyme, lemon and white pepper in a bowl
  4. Dip chicken in egg and coat evenly
  5. Cover chicken in breadcrumb mixture
  6. Press crumbs gently to ensure even coating
  7. Heat about 1cm oil in a large frying pan
  8. Fry chicken for 4 to 5 minutes on both sides, or until golden and cooked through

Note: Server with a side salad, lemon wedges and tzatziki
