Roasted fillet steak with tasty filling

  • 125g Bacon
  • 1 Onion, finely chopped
  • 2 Cloves garlic, crushed
  • A few black peppercorns
  • 250ml Cream
  • 30ml Chopped parsley
  • Salt and pepper to taste
  • 800g Whole beef fillet
  • 125g Feta, crumbled
  • 50ml Oil
  • 25ml Lemon juice


Preheat oven to 160C.

Fry bacon until done, but not crisp. Remove from pan & chop finely.

Saute the onion & garlic in the pan until onion is soft. Add a few peppercorns. Add the cream & boil rapidly until the sauce has reduced to half. Stir frequently. Season with parsley, salt & pepper to taste. Cool the mixture completely.

Make an incision along the length of the fillet, do not cut right through. Open it and flatten slightly with the palm of your hand. Spoon the stuffing onto one half of the fillet, close and secure with string at 25mm intervals.

Place fillet on the rack of an oven roasting pan and roast for about 15-20 min per 500g plus 15 min for rare or 20-25 min per 500g plus 20 min extra for medium rare, baste the meat continuously with basting mixture.

Leave the fillet in the warming draw before slicing. Slice in 2cm slices, sprinkle with feta and grill until cheese has slightly browned.

Serve with the remaining sauce, baked potatoes and vegetables.
