  • 280g of flour
  • 30g sugar
  • Dry yeast 1,5cc
  • 1 tsp salt
  • 60ml of warm milk
  • 60ml of warm water
  • 1 egg
  • 60g heavy cream
  • 1/2 teaspoon vanilla extract
  • 47g soft butter
  • 70g flour
  • Frosting: dark chocolate 60g + 90g cream 30g sugar + + + 25g soft butter vanilla extract + 1 pinch salt


Mix flour (280g) with yeast, sugar and salt.
Make a well and add the water and then the warm milk, egg, cream and vanilla.
Knead the dough and then gradually add the flour (70 g), until a smooth paste.
Add the soft butter gradually and continue kneading until you get a nice dough soft, smooth and slightly sticky. 

Place in a lightly oiled bowl, cover and let rise about 2 hours, the dough should double in volume.
Degas the dough and chill for at least 2 hours or overnight.
On a lightly floured surface, roll out the dough gently without too degas to achieve a thickness of 8-9cm.
Use a round cutter 9cm, for cutting discs and a small plug of 2cm in diameter, to cut the center hole.
Let rise 20 minutes on a lightly floured tray, spacing them well and cover with a clean cloth.
Dip the donuts in an oil bath heated to 175 ° C, and brown 1 minute each side.

Prepare the frosting:
Heat the cream and sugar together over low heat and pour the cream over the chopped dark chocolate in bowl 2 or 3 times, leaving 2 min and mix.
Add the soft butter into cubes, salt and vanilla, mix well and leave aside.
Dip each side of donuts in chocolate icing, place them on a grid and decorate your choice ...
