Ingredients


  • <b>Chicken Strips</b>
  • 4 slices wholegrain bread
  • 1/2 bag flaked almonds
  • 1 tsp paprika
  • Grated peel of 1 lemon
  • 4 skinless chicken breasts, cut into strips
  • 1 egg wight, lightly beaten
  • <b>Couscous salad</b>
  • 1 cup wholewheat couscous
  • 3/4 cup flat leaf parsley
  • 1/4 cup chopped mint
  • 1 large tomato, finely chopped
  • 1/2 packet salad onions, finely sliced
  • Juice of 1.5 lemons (90ml)
  • 1 Tbsp olive oil
  • Pepper to taste

Method


Chicken Strips

  1. Preheat oven to 180'C
  2. Dry bread in oven for 10 to 15 minutes
  3. Combine bread, almonds, paprika and lemon peel in a food processor to form fine crumbs
  4. Toss chicken in egg white and then coat with bread crumbs
  5. Bake on a greased baking tray until golden and cooked through (About 15 minutes)

Couscous Salad

  1. Mix 1 cup couscous with 2 cups boiling water
  2. Cover with cling wrap and allow to rest for 10 minutes or until all water is absorbed
  3. Fluff couscous with a fork
  4. Stir in remaining ingredients, and server with chicken
