  • 200 grams flour
  • 5 eggs
  • 50 grams butter
  • 1/2 l milk
  • 1 cup water
  • Castor sugar
  • 1 pinch salt
  • zest of one orange or lemon


Place flour in a bowl with salt.
Add eggs and mix with a wooden spoon to make a smooth paste.

Crepes Classic

Gradually add the cold milk, water, melted butter just and zest.
Work the dough with mixer or spatula to achieve a spongy cream just covering the spoon.
Let the dough rest, covered, for 1 hour at room temperature.
If the time to cook pancakes, batter seems too thick, add a little water to the mixture.
Cooking the pancakes:
Badigionner a pan with a little oil. The heat over high heat.
Pour a little paste. Make travel immediately the dough in the bottom of the pan so that it is spread very thinly over the entire surface.
When a pancake cooked on one side, turn it over and cook until it comes off easily.
Greasing the pan between each pancake.
As to their preparation, sprinkle with powdered sugar pancakes and cram. Keep the dish warm in a water bath by covering it with baking paper.
