  • 1 medium sized butternut
  • 1 cup chicken stock
  • 3 tbsp lemon juice
  • 2 tbsp olive oil


  1. Peel butternut and cut into small cubes.
  2. Bake butternut in an oven preheated to 180C for around 30 minutes or until crispy.
  3. Cook couscous as per packet instructions, but replace water with chicken stock.
  4. Toss butternut with cooked couscous and drizzle over olive oil and lemon juice.
