Bacon, Vienna and Sweetcorn Pie

  • 300g Viennas, sliced
  • 250g bacon, diced
  • 15ml olive oil
  • 15ml butter
  • 1 small onion, chopped
  • 2 small carrots, peeled and roughly chopped
  • 2 sticks celery, finely sliced
  • 45ml plain flour
  • 420ml milk
  • salt and ground pepper
  • pinch paprika
  • 400g puff pastry, defrosted
  • 1 egg, beaten
  • 2 sweet mielies, kernels cut off


  1. Pre-heat oven to 220C
  2. Place oil and butter in a large pot
  3. Saute onion for 2 - 3 minutes, add and cook bacon for 2 - 3 minutes
  4. Add carrots, celery and thyme and cook over gentle heat for 4 - 5 minutes
  5. Stir in vienna and sweetcorn
  6. Turn up heat a little and add the flour, keep stirring for about a minute before removing from heat and adding the milk
  7. Return to heat and cook whilst stirring for another 1 - 2 minutes
  8. Season to taste and add a little milk if necessary
  9. Pour into an appropriately sized pie dish, egg wash the rim of the dish, drape over the rolled pastry and trim the edges with a knife
  10. Egg wash the top and cook for 10 minutes
  11. Reduce temprature to 200C and make for a further 15 minutes or until golden on top

Note: You can also make several small individual pies.
