Ingredients


  • CREPE PAN BATTER
  • 1 1/2 cups flour
  • 2 T sugar
  • 3 eggs
  • 1 1/2 cups milk
  • 2 T butter melted
  • 1 t lemon extract
  • FILLING
  • 1 LB Ricotta or Pot cheese
  • 1 egg
  • 1 t sugar
  • 1/8 t cinnamon or vanilla
  • raisins

Method


mix crepe batter with mixer

mix filling and fill crepes makes 12 blintzes

crepe batter not crepe pan-2 eggs, 1 cup milk, 2 T salad oil 3/4 cup flour mix in blinder and let sit for 30 minutes

FOR BLINTZ CASSEROLE 1 DOZEN IN 9X13 pan --melt 1/4 lb butter dip blintzes- 1 1/2 cup sour cream 1 t vanilla 4 eggs beaten 1/4 cup sugar beat and pour over blintzes  350 degrees 45 minutes
